How to Cook the Perfect Hotcake

A plateful of hotcakes may seem like a simple breakfast classic, but cooking a hotcake is more complicated than it looks. The truth is that a perfect hotcake is an art form, and it takes time to master. Fortunately, with a little practice, you can whip up hotcakes that you’ll be proud to put on your table. Resist the Urge to Mix

If you’re accustomed to baking, then there is a good chance that you’re accustomed to mixing doughs and batters until they are free from lumps. When faced with a bowl of hotcake batter, you may be tempted to do the same. The key to fluffy hotcakes, however, is to leave those lumps alone. Over-mixing hotcake batter causes gluten to develop, and the more you mix, the more gluten you get, resulting in a less tender cake. As soon as your wet and dry ingredients come together, step away from the spoon.

Give Your Batter a Rest

You may be anxious to get those hotcakes into a pan, but the best batter takes time. After you have done the minimal stirring required, give your batter a chance to rest before you start cooking. As your batter rests, the gluten that developed while you were stirring will begin to break down. As that gluten breaks down, your chances of turning out fluffy hotcakes go up. Rest the batter for at least five minutes, but leaving it for 30 minutes will give you the best results.

Hold Back on the Heat

Your pan should be hot when you drop your batter into it, but don’t crank your heat beyond medium. If you cook your hotcakes over heat that is too high, you’ll get burned outsides and wet insides. As you cook, don’t believe the myth that you should flip you hotcakes when the bubbles appear. Wait for the bubbles to burst and then flip to get the best finish.
